Ingredients

  • Extra virgin olive oil spray
  • 1 medium eggplant, sliced lengthwise in 1/4-in thick slices
  • 2 large uncooked zucchini, sliced lengthwise in 1/4-in thick slices
  • 1 large egg, beaten
  • 6 mushrooms diced
  • 1/4 green bell pepper diced
  • 3/4 pound part-skim ricotta cheese
  • Crushed red pepper flakes, to taste
  • 1/4 cup basil, fresh, cut into thin strips
  • 1/2 cup grated Parmesan cheese, divided
  • 4 cup pizza sauce, divided [Note:  Use 2-3 cups for thicker lasagna.  This is my preference!]
  • 1/2 pound shredded part-skim mozzarella cheese, divided.  [Note:  I use organic for eggs and all dairy ingredients when possible]

Directions:

  • Pre-heat oven to 400°F.  Coat two baking sheets with olive oil spray.
  • Place eggplant on one prepared baking sheet and place zucchini on other prepared baking sheet; spritz vegetables with olive oil spray.
  • Roast 8 minutes; turn over vegetables and roast for 7 to 10 minutes until soft but not mushy; remove from oven and set aside.
  • Meanwhile, in a medium bowl, combine egg, ricotta cheese, red pepper flakes, basil and 1/4 cup Parmesan cheese; set aside.
  • When vegetables are done, reduce oven temperature to 350°F.
  • To assemble lasagna, coat bottom and sides of a 14×8 inch baking dish with olive oil spray.  Spread a thin layer of sauce on bottom of pan.  Layer eggplant over sauce . Cover eggplant with half of marinara sauce and then spread half of ricotta mixture on top; sprinkle with half of mozzarella cheese. Top mozzarella cheese with zucchini and mushrooms and cover zucchini with remaining marinara sauce; spread with remaining ricotta mixture, top with remaining mozzarella, then sprinkle with remaining parmesan cheese and green pepper.
  • Bake about 35 to 40 minutes. Remove lasagna from oven and allow it to rest for about 15 to 20 minutes.

Greg Plitt has got some new exercises

23 Jul

Going to the gym 5-6 days a week doing the same exercises over and over can get so monotonous. So I have been searching for a new program that will shock the muscles, break through the plateaus, and add some more fun into the workouts.  I’m still going through all the programs on Bodybuilding.com searching for something new. But I’ve stopped now on Greg Plitt’s MFT28 Program.

Now been theres a lot of talk through the different programs on the site about reps and sets, and also muscle groupings, cardio, HIT, and recovery. Many of the principles are again just the same boring exercises we do everyday. Greg Plitt however has really added a much needed twist to the base exercises, varied them, and grouped them into supersets and giant sets which really make it a lot of fun and crazy challenging to do. Much better then doing 3 sets of 10-8-6 reps bench press, then incline bench press 3 x 10-8-6, then decline bench press 3 x 10-8-6…zzzzz..too boring

I’m going to warn you though, he prides himself as motivator and he truly is good at it. However I think he over does it in this video series, and says “man” way too much which is super annoying. But either way his workouts are intense and fun as hell. I did the back demolition workout today, it was amazing, however i think its a bit short. His ropes were a great idea, the wide grips rows off the bench was smart, barbell rollers were fun, and pretty much his entire approach is creative and new. It was a great super hard workout. Here it is below:

Greg recommends doing 1 muscle group a day but doing 2 a day workouts. I’m not sure I can squeeze that into my schedule. I think i’m going to just fuse 2 workouts by doing 2 muscle groups a day, and then also add Jim Stoppani’s “cardio acceleration” concepts (see below) in between exercises as well for added fat burn.

I also think his ab workout is weak sauce. I’ll post a better one when I find it. Come on Greg! REALLY?! Standard Sit ups!? Bicycles?! I got to say I’m disappointed in this ab workout. Boo.
